2025 prep challenge days 10 and 11
Sunday the 10th
I had fruit and yogurt for breakfast
For an afternoon snack, I had cereal with frozen fruit
I ran 1.25k
I had an ice bath
I woke up at 6:10
I did a post run stretch
I did some gratitude journaling
Monday the 11th
I had chocolate chia seed pudding for breakfast
For dinner, I had pork schnitzel with honey roasted carrots, crispy potatoes, and garlic broccolini
For lunch, I had a sandwich with tomato, chicken, lettuce and cheese
I meditated for five minutes
I wrote a to-do list
I ran 2.55k
I woke up at 6:10 and was ready for school around 7:15 which is so fast, so I had heaps of time in the morning to watch lots of motivational content
I made my bed
I had around 2.2 liters of water

Todays a real marinating day for starters I decided (since I recently took the squeeze ginger pill) that I wanted to marinate our weekly sauce chicken (when we did it flat bacon earlier this week it was bussing if you ever make fried chicken use corn starch and let it rest it turns into paste and fries penis poppin) but then my mommy was like “I know you made schnitzel before and we have this patient at the hospital whose diabetic and they’re making him eat sandwiches and shit (not diabetic food) and he’s been going on about schnitzel could you make him some” and I’m like “if he’s from Germany I don’t know if it’ll be authentic but I can fry some pork (tried to make it diabetic friendly but there’s only so much you can do to deep fried meat) so we’ve got two (count ‘em two) bags of meat just sitting in liquids just chillin like a villain and I’ve never felt more accomplished

Monday November 18th
Timaru
A lovely two-and-a-half hour drive north along the coast from Dunedin to Timaru. Stopped off about half way along to look at the Moeraki Boulders.
Amazing spherical rocks that only occur at this point on New Zealand's coastline. Each boulder weighs several tons and is up to two metres high, although most are partially buried in the sand. According to Maori legend, the boulders are gourds washed ashore from the great voyaging canoe Araiteuru when it was wrecked upon landfall in New Zealand hundreds of years ago.
Wandered around the beach and then through a short forest trail before driving on to Timaru.
Hit town at about 1.30pm, quite hungry despite a lovely breakfast of bacon and eggs. Walked up and down the main drag of town but couldn't find any food stops until we finally found a cafe that was doing lovely sandwiches. Slight prounciation issues as Mark thought he was being offered soil and seed bread ( it was soy and seed) but we ended up with a very tasty lunch.
Checked into the Bay City motel and went for a bracing walk on the brilliant sandy beach. Headed on to the Pak N Save store to buy salad and pork schnitzels for a tasty meal cooked back at the motel.
As dusk began to fall, headed back to the beach to see blue penguins come ashore. Only a few compared to last night, but just as wonderful to see them.

A law in Austria requires this dish to made strictly with veal. Chefs make #WienerSchnitzel by tenderizing a thin slice of veal and then lightly salting and breading it. It is then deep-fried in clarified butter. The term “Wiener Schnitzel” was first used in the early 1830s, though similar recipes appear earlier.
Wiener Schnitzel is traditionally served with lettuce salad, cucumber salad, or potato salad. Some people serve it with parsley potatoes. A slice of lemon may also be served with the schnitzel. Rice, roasted or mashed potatoes and French fries have also become popular side dishes to Wiener Schnitzel lately.

#9: Schnitzelbrötchen
My favorite lunch spots while in Germany were bakeries. They had sandwiches, salads, coffee, cold-pressed juice, and, of course, sweet treats. One of the German bakery staples included schnitzelbrötchen, which consisted of schnitzel on a bakery roll with a chive sauce topped with cucumber and tomato. It was yummy, it was balanced, and, most importantly, it was light. I love a light lunch, because heavy lunches make me feel sluggish for the rest of the day. That isn’t ideal when you’re doing a lot of walking.
I know it seems basic, but the little schnitzel sandwich was so simple and perfect and tasty that it had to make the list. Although, it is important to note that sometimes schnitzel is chicken and sometimes it’s pork, so I would make sure to ask before ordering it if you prefer one or the other. Another thing to note is that bakery food is served straight from the display case, so it usually isn’t warm. That wasn’t an issue for me, because I prefer a cold lunch, but if you like a hot lunch, a bakery sandwich may not be the best choice.
But, if you’re like me and like a quick, light, cold lunch, I would highly recommend trying bakery sandwiches, specifically the schnitzel sandwich.

Woke up this morning and, for some reason, I was instantly struck with a monstrous meal plan. Guess my mind is thinking 'bout food more these days. Decided to count calories throughout the day. Here's the results.
Breakfast: Like half a box of Hazelnut Muesli, obviously topped with appropriate amounts of milk, and a chocolate muffin because yes. (700 + 100 + 400)
Lunch: Two potato gratins, and some chicken meatballs. (400 + 200)
Snacks: A banana, and later on a seed pretzel. (100 + 300)
Dinner: A sandwich on a mini baguette with some ham and butta, as well as a salad with a bit of avocado n mayo, a bit of pork schnitzel, and a big mug of sangria. (500 + 250 + 100 + 250)
Dessert: I went through another entire 24-cookie pack of Oreos, with a bit of milk because Oreo, as well as a Ciocolatino, aka a chocolate cake thing. (1250 + 50 + 400)
TOTAL TALLY FOR THE DAY drumroll pleeeeaaaasseee: Five thousand!
Hot damn.
Might have miscalculated somewhere, but I don't think so.
So, yeah. Guess I'm in deep now. Guess I'm a pig now. So like, groh, or somethin'.
